Default valve shiming

i have a 1991 kx125, currently i am in the process of a rear shock rebuild and wanted to re-shim my stock valve for a 170lbs rider. i really don't know where to start, how does shimming work on the rebound and the compression? and what do you guys recommend. how does stacking the shims work. i really needed more knowledge on this before i do this
