When i run race fuel in my YZ250, i usually mix it like normal but with a little more oil. With pump gas i go 40:1 and with the race fuel i go 32:1 or more. I have a Pro Circuit pipe and silencer and the 39mm Keihn carb. i use a 175 main with the needle on the second notch from the top.

theres no need to run race fuel, unless your compression requires it, if not its a waste of money and wont help performance matters much, pump 91 is fine as long as it suits your compression, what is your compression?
race fuel or not i think you should pick one mixture and stick with it anywheres from 32:1 - 40:1 IMO

For jetting you can search on how to do a "plug chop" for fine tuning your jetting
