Cool head for zilla question..

I just got a cool head with 2 dome sizes(62,59). I know that stock cc is 62. I was wondering do I have to use the head gasket on both domes or can I just use the oring that's on the head itself? The 62cc dome doesnt' have a oring but the 59 cc dome does. Why is that? I was gonna start with the 62 first then if I loose to a shee

then I'll up the compression.
